A couple weekends ago, we made our first visit to Bibo Ergo Sum in West Hollywood. It’s a sleek, mixology-focused bar; we liked our quiet table with comfy bench seating.
When we said we liked spirit-forward cocktails, we were surprised that the bartender pointed to the Nite Lite — a drink with apricot brandy and Frangelico. But it turned out to be nicely balanced. The high-proof bourbon probably had something to do with that, as well as the bitter and smoky Amaro Sfumato. We got the recipe from the bartender so we could make a version at home. We ended up liking it with a little less sugar, just 1/2 teaspoon.
