Recipe: Malibu Chai (serves one)
- 1 oz. Malibu rum
- 3 oz. unsweetened chai tea, chilled
- pinch of ground cinnamon
Place rum and chai tea in a shaker with ice. Stir. Serve “up” in a cocktail glass. Sprinkle with cinnamon.
This is a refreshing, low-alcohol cocktail that’s different from what we typically find at bars. We like to make it when we have leftovers of our homemade chai tea. We’ve tried mixing various spirits and liqueurs with the leftover chai, and this combo is surprisingly good — the Malibu adds some sweetness to the subtly spicy drink. If you feel like a stronger cocktail, add 1/2 oz. of vodka.
