Recipe: Creamy Coconut Coffee (serves 2-3)
- 3 cups hot coffee
- 1/4 cup full-fat coconut milk, unsweetened
- 1/4 cup low-fat milk or almond milk
- 1/2 tsp. vanilla extract
- sprinkle of ground cinnamon
Blend ingredients in a blender. Serve hot, or chill then serve over ice.
Recently, a friend who was visiting for brunch asked if we had half-and-half to put in her coffee. We only had low-fat milk, but had a can of coconut milk in our pantry. In the past, we had tried mixing straight coconut milk with coffee, and thought it was too rich. This time, we tried a mixture of low-fat and coconut milk. Our friend thought it was great! Using the blender makes it easy to mix in the coconut milk and gives the drink some nice foam on top.
