Talkin’ Bout Practice

Recipe: Talkin’ Bout Practice (serves one)

  • 1 oz. silver mezcal
  • 1 oz. reposado tequila
  • 1 tsp agave syrup
  • 1 dash (1/8 tsp.) chocolate bitters
  • 1 tsp Fernet Vallet

Shake all ingredients except Fernet Vallet in mixing glass with ice. Pour into ice-filled rocks glass. Slowly pour Fernet Vallet on top (you can pour it over the back of a spoon to improve the layering effect).


We first had this drink at Kask on our trip to Portland almost two years ago. We tried to recreate it soon after the trip, but it never came out right — it kept ending up either too bitter or too sweet. We recently found a recipe for another cocktail, the Hanky-Panky, which uses just one teaspoon of fernet. We tried this in the Talkin’ Bout Practice and it came out great.

The recipe we arrived at is essentially our Mezcal Old Fashioned with a teaspoon of Fernet Vallet floated on top. Not only does the fernet add complexity, but the layering creates a fun visual effect.
